With the passing of the time, new ways of cooking were developed due to the influence by worldwide national cuisine, brought to India by travel wagons.Kashmiri and Mughlai which are types of central Asia cooking style, dominate from the north to the west . Bengali and Assamese are used by people in east India and they are types of the East Asia style of cooking. People who live on India's coastline prepare a meal with fish and coconuts. Rajasthan and Gujarat are dessert types of Indian cuisine, using different sorts of preservers to replace the need of fresh vegetables. The Andhra cooking style uses mainly chilli for its meals. In the north of India many different types of flours are used to make bread or the famous Indian chapattis. Rice is only used in the rainy parts of the northern coast of the country.
Bengali is food made of fish and rise. Coastal cuisine uses coconuts for its meals but the oil from the coconuts takes no part in the cooking. Mustard oil is preferred. Bengali spicing is different from the India's originals.Today in the evolving modern India only a small number of ancient cookbooks exist.
